Sunchoke

The sunchoke or Jerusalem artichoke is a sunflower species (helianthus) than makes underground edible tubers (tuberosus)

They are prized knobby little delicacies that taste somewhat like a floral potato. High in inulin

This is the native Missouri ecotype
